Method
Step 1 – Prepare the Dough
- In a mixing bowl, combine dry ingredients: flour, baking powder, baking soda, and salt.
- In another bowl, whisk kefir, egg, and vanilla.
- Now combine wet ingredients into dry ingredients and mix to form a soft dough.
Step 2 – Rest or Ferment (Optional)
- Quick version: Use immediately
- Fermented version: Let dough rest in a warm spot for 4–12 hours for better fermentation benefits and digestion
Step 3 – Roll Out the Dough
- Place dough on a greased counter or cutting board.
- Roll into a rectangle (about 5 x 12 inches). Keep even thickness.
Step 4 – Add Cinnamon Filling
- Spread melted butter, then sprinkle cinnamon and sugar evenly.
- Use a spatula to spread the filling properly.
Step 5 – Roll and Cut
- Roll dough tightly into a cylinder shape.
- Cut into 5–6 equal pieces for even baking.
Step 6 – Bake the Rolls
- Preheat oven to 350°F (350 degrees).
- Place rolls on a baking sheet lined with parchment paper.
- Bake for 18–20 minutes until golden brown and soft in the center.

- Whisk kefir, powdered sugar, and vanilla until smooth.
- Adjust to get a thick frosting texture.
Step 8 – Glaze and Serve
- Spread frosting on warm rolls for best flavor.
