Ingredients
  

  • WHISK
For the Dough
  • 1 cup lowfat plain kefir or whole milk kefir
  • 2 cups all-purpose flour or gluten-free flour / whole wheat pastry flour
  • 1/2 cup coconut sugar or sugar
  • 1/4 cup coconut oil or butter
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • Optional: vanilla whey protein powder or additional protein powder for a protein boost
For the Cinnamon Filling
  • 1/4 cup brown sugar or coconut sugar
  • 1 –2 tsp ground cinnamon
  • 2 tbsp melted butter or oil
  • For the Glaze / Frosting
  • 3 tbsp kefir
  • 1 cup powdered sugar
  • 1/2 tsp vanilla
Optional: protein powder for protein frosting

Method
 

Step 1 – Prepare the Dough
  1. In a mixing bowl, combine dry ingredients: flour, baking powder, baking soda, and salt.
  2. In another bowl, whisk kefir, egg, and vanilla.
  3. Now combine wet ingredients into dry ingredients and mix to form a soft dough.
Step 2 – Rest or Ferment (Optional)
  1. Quick version: Use immediately
  2. Fermented version: Let dough rest in a warm spot for 4–12 hours for better fermentation benefits and digestion
Step 3 – Roll Out the Dough
  1. Place dough on a greased counter or cutting board.
  2. Roll into a rectangle (about 5 x 12 inches). Keep even thickness.
Step 4 – Add Cinnamon Filling
  1. Spread melted butter, then sprinkle cinnamon and sugar evenly.
  2. Use a spatula to spread the filling properly.
Step 5 – Roll and Cut
  1. Roll dough tightly into a cylinder shape.
  2. Cut into 5–6 equal pieces for even baking.
Step 6 – Bake the Rolls
  1. Preheat oven to 350°F (350 degrees).
  2. Place rolls on a baking sheet lined with parchment paper.
  3. Bake for 18–20 minutes until golden brown and soft in the center.
Step 7 – Make the Kefir Glaze
  1. Whisk kefir, powdered sugar, and vanilla until smooth.
  2. Adjust to get a thick frosting texture.
Step 8 – Glaze and Serve
  1. Spread frosting on warm rolls for best flavor.
  2. Serve fresh and enjoy your soft, fluffy cinnamon pastry.
