Instructions for Kefir Cheese Pancakes
    Step 1: Prepare the wet ingredients
    1. In a mixing bowl, combine 1 cup of cottage or farmer cheese with 1 cup of plain kefir. Stir until smooth and creamy. Add 2 lightly beaten eggs and mix well.
    Step 2: Combine the dry ingredients
    1. In a separate bowl, whisk together 3 tablespoons of flour, 1 teaspoon of baking powder, 2 tablespoons of sugar (optional), and ¼ teaspoon of salt.
    Step 3: Mix wet and dry ingredients
    1. Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing to keep the pancakes soft and fluffy.
    Step 4: Heat the pan
    1. Place a non-stick frying pan or skillet over medium heat. Add 1–2 tablespoons of butter or oil and let it melt, coating the pan evenly.
    Step 5: Cook the pancakes
    1. Scoop small portions of batter onto the pan. Cook for 2–3 minutes, until bubbles form on the surface. Flip carefully and cook for another 1–2 minutes until golden brown.
    Step 6: Serve and enjoy
