Method
 

  1. Step 1: Preheat

    Preheat a non-stick pan or griddle over medium heat (about 300°F / 150°C). Lightly grease with butter or oil.

    Step 2: Mix Dry Ingredients

    In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and optional sugar until well combined.

    Step 3: Mix Wet Ingredients

    In a separate bowl, whisk the kefir, eggs, melted butter (or oil), vanilla extract, and maple syrup until smooth and creamy.

    Step 4: Combine Batter

    Pour the wet ingredients into the dry ingredients. Gently fold together until just combined. Do not overmix — a few small lumps are perfectly fine. Overmixing can make pancakes dense instead of fluffy.

    Step 5: Add Optional Mix-Ins

    If using blueberries, chocolate chips, or mashed banana, gently fold them into the batter.

    Step 6: Cook the Pancakes

    Scoop about 1/4 cup of batter onto the heated pan for each pancake. Cook for 2–3 minutes, until bubbles form on the surface and the edges look set. Flip and cook another 1–2 minutes until golden brown.

    Step 7: Keep Warm (Optional)

    If making multiple batches, place cooked pancakes on a cooling rack or in a warm oven (200°F / 90°C) to keep them warm.

    Step 8: Serve
